Erin Carroll is a very special member of the Southern Weddings family. Her wedding to Todd was featured in our very first issue back in 2008, and since then, we’ve followed along with her growing family on her blog, Blue-Eyed Bride. She’s even been to Making Things Happen, and contributed to the marriage advice feature in our latest issue! Her South Carolina home is the kind of nest that many of us want – lovely, yes, but also filled with encouraging words, lots and lots of photo memories, and passed-down items with history.

Who lives in this lovely home? Erin and Todd, married six years, Hudson (5), and Hayes (3)
Tell us your love story in one sentence. We met and fell in love at work, thanks to our common love for Gamecock football and Home Alone, got married, and are now raising two wild and precious boys.
What is your favorite part of being married? Being able to experience all of life’s big moments, small moments, ups, and downs with my best friend.

Do you rent or own? We own. We bought a house together right before we got married, and we lived there for five years. After two kids, we were bursting at the seams. We lived with Todd’s grandmother for a year while we built our current home.
Tell us about the process of moving in together. Todd is not very opinionated when it comes to style. He didn’t have many opinions when planning our wedding, and he has taken the same approach with decorating. When he does have an opinion, I sit back, listen, and try really hard to be considerate of his wishes. He has so few opinions, I feel I should at least respect the ones he does have!
Which room in your home is your favorite, and why? I love our kitchen. It is open to the family room, and we spend so much time in both of those rooms. I love the light and the fact that I can be doing my thing in the kitchen while still being able to see the boys and Todd while they hang out in the family room.

Which items from your wedding registry do you use the most often? Our everyday dishes are my favorite thing. We still don’t have the entire set, but I just love the pattern. We even use them for holidays because I love them more than our fine china. I also love my All Clad pots and pans. I never would have bought them for myself, so I’m super thankful to have them.
What different decisions, if any, would you make for your registry if you knew then what you knew now? I wouldn’t have registered for things like cookie decorating kits and pancake batter dispensers. Those things have never been used in six years!
Who cooks dinner? I do. I meal plan on Sundays, shop on Monday mornings, and usually cook four meals per week. We do leftovers at least once for every meal I make, and on Saturdays, I make a crockpot meal. I get it started in the morning and then we can enjoy our day without having to spend much time in the kitchen.
What is your go-to weeknight meal? Weekend meal? I’ve recently given up grains and sugar, so I haven’t eaten this in a while, but I love Kevin and Amanda’s Spicy Sausage Pasta. It is amazing and a total splurge, but it’s a crowd pleaser! On the weekends, I love to make The Pioneer Woman’s Pot Roast or Skinny Taste’s Chicken Santa Fe.
What’s your favorite place to find recipes? I have a huge collection of Junior League cookbooks, and each one of them is filled with tried and true, passed down recipes. I also love Skinny Taste, The Pioneer Woman, and Ina Garten. Now I’m getting hungry!

Where do you splurge and where do you save when decorating? I splurge on lighting. Light fixtures can really define a space and make a big statement. I’m fortunate that my mom is a decorator and I am a buyer for her company, so I’ve been able to save a lot by getting really beautiful things at wholesale cost. I’ve also purchased a few antiques at antique markets–Scott’s in Atlanta is full of beautiful treasures, and they will bargain with you! I talked a guy down by half the cost when I purchased my dining room chairs. I found them and they were exactly what I had dreamed of, but I had a budget. I told him I wouldn’t spend more than my budget allowed, and he called me 20 minutes later to tell me that he’d sell them to me at the price I named.

What most makes your house feel like home? I am a strong believer in filling our home with things we love. Books we’ve read. Souvenirs from travels. Local pottery. Family photographs. When I’m accessorizing, it is so important to me not to have anything that is just “filler,” so it sometimes takes me awhile to finish decorating a room. Our home tells our story, so every little thing here also seems to have a story.

What’s your best tip for balancing your relationship and other life priorities? This gets so tough. I feel like with every season, we have to reevaluate and set new boundaries. Todd works long hours, and as a blogger, it’s easy for me to get very distracted by letting in too many “voices” via other blogs, social media, responding to blog comments, etc. I’ve found that I have to start my day early if I want to take care of my personal needs, like my quiet time and Bible reading, exercise, and any other things that just serve me. I stay at home with the boys, so the rest of my day is all about them. Todd is home between 6:30 and 7:00 every night, so that time for dinner and bedtime is sacred. We really value the weekends. I have a monthly Sunday girls night, but otherwise, the weekends are for family. Our favorite weekends are the lazy ones spent at home watching movies and playing outside with the boys.

Do you have a favorite date night idea to share? When Hudson was a baby, we used to just get in the car and let him sleep while we drove around, looked at houses, and saw new things popping up in our town. These days, we love to go out to dinner and to see a movie. Movies are a real treat! When we can’t get out, we put the kids to bed and watch a movie together on Amazon Prime. Our Blu-ray player has been such a great thing for binge-watching TV shows together and seeing movies we never got to see in the theater.
What is one small way you love or serve your spouse? I’ve realized that Todd is so happy and so much less stressed when I am financially responsible and respectful of our budget. When I don’t go to Target or make random little Amazon purchases, it makes him so happy.

Do you have children? We have two boys, aged five and three. Things are still up in the air in regards to whether or not there will be more children, but right now, we’re so happy with these boys.

Is there anything else about your home or family life that you think our readers would be interested in? Our relationships with Jesus Christ are the most important things to us. We want our children to see that in us, and when we find that we’re not making time for Him, we stop and reevaluate and decide what we need to change. It is amazing how much of a difference we see when we allow God to lead us and we stop trying to do things on our own. Life gets really crazy and can be very distracting, but we know that when we put God first and allow Him to be in control, He does work all things together for our good.

What has been the most surprising thing about marriage? The wedding is just the beginning. It’s not always pretty after that, but the memories trump the wedding by a million!
Before getting married, I wish someone had told me… to let go of all expectations and understand that two different upbringings are going to require making big decisions together. It’s not about a fairy tale and it’s not about instant gratification. The beauty of marriage is experiencing the memories along the way.

In 2014, our family is most excited about… being settled! We spent 2013 living with Todd’s grandmother, and we are so thankful for that time, but it is nice to be back to living in our own home with just the four of us, making memories. We’re looking forward to a summer full of days at the pool and doing our best to unplug.

      Thank you, friend! The key to the crockpot is finding a really great recipe because they’re not all great. ;) But I promise it can change your week if you make one or two crockpot meals! So excited for you!

    Love this post! I have been reading Erin’s blog for quite some time and her new home is absolutely beautiful. A dream home for sure. Her family is what we all hope and pray for as little girl’s and when we walk down the aisle on our wedding day.

Today’s couple has been on our radar for awhile–Mandy is a longtime Southern Weddings reader and a Making Things Happen alum, so she’s an old friend to us! We were delighted when she offered to share her and her husband Conner’s favorite date night ideas with us–especially considering that they’ve recently made a truly inspiring lifestyle change, leading to their collective loss of 177 pounds in the past year! From living a healthy lifestyle to cultivating their marriage, Mandy and Conner are so committed in every aspect of their lives, and we love their creative ideas for spending quality time together. Our Blue Ribbon Vendor, Gracie Blue, caught up with this cute couple at the Blue Rooster Cafe in Lawrenceville, Georgia to capture one of their favorite breakfast dates!

Names: Mandy and Conner Volpe
Years married: We will celebrate three years on August 13!
By day: Conner is a Client Technical Specialist (he is the brains of the family). I am the Marketing Manager for Unique Venues, which helps planners and brides find non-traditional venues for their events or weddings.

How they met: Conner and I met one summer when I was an intern at Georgia Tech, where Conner went to school. He pursued me all summer before I realized (with some nudging from friends and family) that this boy was crazy about me and I would be a fool not to give it a shot.

Their wedding: Since we met at Georgia Tech, we wanted to have our wedding in the city. The whole wedding was blue and yellow (a nod to GT, as well as our favorite colors) and it was steeped in tradition. As my something old, I carried a handkerchief from my parents’ wedding, which was embroidered with the married monograms of both my parents, plus our new married monogram, to signify the joining of families. It will continue to be passed on to my brother and sisters, as well as the grandchildren someday. Conner carried a handkerchief and photo from his grandfather, who had passed away when he was little. My mom made our AMAZING seven-tier wedding cake, and Conner’s mom and grandmother did a beautiful job making all of the floral arrangements.

Mandy and Conner’s top five favorite date ideas:

1. Post-travel breakfast: Conner travels a lot, so we made it a priority to set aside “post-travel breakfast dates.” Sometimes this falls early on a Friday morning before the work day starts, and sometimes it’s even a Wednesday night breakfast supper if Conner is between two flights. We find it important to start new-to-us family traditions that focus on our marriage and quality time.
2. Active dates: A year ago, we set out to have a healthier lifestyle. Newlywed life had brought about expanding waistlines as I attempted to develop my non-existent skills in the kitchen. An active date for us is heading over to the local pool to swim some laps, and then capping off the night with a trip to the frozen yogurt shop!
3. “Best of the Best”: As part of our healthy lifestyle, we try to only eat sweets on special occasions. We seek out the best sweets we can find, rather than having a nightly cookie before bed. For our anniversary, we both went into the bakery separately and picked out desserts for one another. We didn’t open the surprise desserts until we had reached the local park, where we ate and watched the sunset. We’re excited to try a local Southern cafe that has the most sinful-looking desserts. Conner has already reached his goal weight and I am seven pounds away from mine. As soon as I reach my goal, we plan to splurge on a dessert date there!
4. Themed envelope date: This one was a huge surprise for Conner. I gave him two envelopes, and he was only allowed to open one in the morning. Inside was a date card that gave him vague details about what to wear, what time to be ready for dinner, and anything special he needed to know. It kept him in suspense all day and made a movie and dinner date a little more fun!
5. DIY date: We just purchased our home a year ago, so there are a lot of projects to do around the house. We enjoy planning the projects, sourcing the materials, and then completing them together. Conner is very handy, so this is also a great way for him to teach me his hammer and power tool skills!

One of the biggest reasons we launched Southern Newlywed is because we know so many of our readers come to us before they’re even engaged, follow along as they plan their weddings, and then stick around long after their big days…and we LOVE that! Laura is one of those gals, and she is as sweet and Southern as they come–something you can see clearly in her and Geoff’s beautiful North Carolina wedding that we featured over a year ago! We were delighted when Laura shared some of her newlywed kitchen tips with us, as well as her ten favorite recipes, including a special one from her momma that we can’t wait to try!

By day: I am an administrative assistant for state-wide educational grant and Geoff is a high school history and civics teacher.

How they met: We met in the Single Adult Sunday School class at our church. I was new to the area and was hoping to make some new friends. Happily, Geoff became one of those friends, and over time, my best friend!

Their wedding: We got married on a gorgeous fall day in North Carolina. We had a church ceremony and a tented outdoor reception, and we were surrounded by family and friends who came to celebrate with us. Our day included kettle corn, Cheerwine, and cornhole, it doesn’t get much better than that! Almost two years later, we still remember it as the happiest day of our lives, and I often say to Geoff that I wish we could get married again since we had such a good time on our wedding day. (P.S. See their darling wedding here!)

Meal planning: I do all of the meal planning. I only began consistently meal planning at the beginning of this year, and since doing so, it has made such an impact on our daily lives. We have saved money by not going out to eat as often and I no longer get stressed at 5:00 wondering what I should make. On Sunday afternoons, I sit down and plan out the upcoming week’s meals (I love using my Emily Ley Simplified Planner to do this). I usually choose simple recipes or crockpot meals for weeknights and time-intensive or new recipes for weekends. Do not underestimate the power of meal planning!

The cooking: I do most of the cooking. I have both Italian and Southern roots, so feeding people is one of my love languages :) I really do enjoy cooking and baking, so I don’t mind taking on this responsibility. However, if I am having a busy week at work, Geoff is definitely willing to step in and make dinner for us. I must admit, he makes an excellent spaghetti sauce–it’s even better than my Momma’s (but don’t tell her I said that!).

Favorite meal-related memory: I think some of our favorite meal-related memories have come from introducing each other to our respective family’s food traditions. Geoff’s family always celebrates birthdays with a lunch of “steak and cake,” so after we were married, they had a steak and cake lunch for my birthday, which really made me feel like I had become a part of their family. My family always has Chinese food on Christmas Eve (it’s a long story), and I love having Geoff be a part of that tradition now. We’ve also ​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​started creating some of our own food traditions and we’re looking forward to the memories we will make surrounding those traditions in the years to come.

Top ten favorite recipes:
1. Best Ever Chocolate Chip Cookies: This recipe lives up to its name–it is definitely the best chocolate chip cookie recipe I have found. The secret is to cream the butter and sugar together for at least five minutes. This recipe makes a large batch, so I usually only bake half of the dough at a time, and I freeze the other half for later use.

2. Farfalle with Chicken, Tomatoes, Caramelized Onions, and Goat Cheese: This is an excellent meal to make when you are having friends over and you want to make something a little fancy. It’s a relatively simple recipe, but it looks and tastes like you spent hours on it. Serve it with some crusty bread and a good wine and you are all set.

3. Summer Orzo Pasta Salad: I love this pasta salad–it is light and refreshing, and makes the perfect side to take to summer cookouts or picnics. I’ve already made it three times in the past two months!

4. and 5. Parmesan-Crusted Tilapia and Spicy Honey-Brushed Chicken Thighs: I am always on the hunt for quick and easy weeknight meals. Both of these recipes taste great and are ready in under 30 minutes. They are also my husband’s favorite weeknight meals.

6. Pioneer Woman Black-Eyed Pea Dip: Is there anything better than “game day” food? I don’t think so. This black-eyed pea dip is easy to make and so yummy, it’s always a crowd pleaser during football season. I also make this dip on New Year’s Day so we can make sure we get our fill of black-eyed peas for the new year.

7. Pomegranate Jeweled White Cheddar, Toasted Almond, and Crispy Sage Cheeseball: You can’t get much more Southern than a cheeseball, and this one is delicious. It can be rather time-intensive, but it is a beautiful addition to any holiday buffet.

8. Crunchy Crab Cakes: This is my go-to recipe for date nights at home. It’s a little more special than our usual weeknight dinners, but it’s easy enough to make so that I’m not stuck in the kitchen all evening.

9. Cinnamon Rolls: I’ve tried multiple cinnamon roll recipes and this one is definitely my favorite. It might seem a little intimidating since it is a yeast dough, but believe me when I say that it’s hard to mess up. Even if your dough doesn’t rise like you expect it to, it will still taste great!

10. Blueberry Cream Pie: This is a recipe that was passed down to me by my Momma. It is definitely one of my favorite summer desserts and it is so easy to make. The recipe makes two pies, so keep one and share the other with friends or neighbors.

Ingredients:
2 9″ graham cracker pie crusts
8 oz. block of cream cheese (softened)
1 can sweetened condensed milk
1/2 c. lemon juice
1 large container of Cool Whip (thawed)
2 pints of blueberries

Directions:
Use an electric mixer to whip together softened cream cheese, condensed milk, and lemon juice. Whip until smooth (this may take several minutes). Add thawed Cool Whip and mix in well. Add blueberries (stir in by hand gently so berries stay whole). Pour into pie crusts and chill.
